To check to see if the chicken is done cut into lower thigh meat, where the leg attaches to the body. If the juices that run out are clear the chicken is cooked

Almost any assortment of vegetables can be roasted. All that is needed is to cut the vegetables into a large enough size to ensure it will not burn.

If wish to serve just breast meat, it is beast that the meat be left on the bone until cooked, so either ask your butcher for the front half of the chicken or have him split it in half.
